Herby Sausage Meat Stuffing Bake with Sage and Onion

Ingredients

  • 1 lb sausage meat (pork or pork & herb)

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tablespoon fresh sage, finely chopped (or 1 tsp dried)

  • 1 tablespoon fresh parsley, chopped

  • 1/2 teaspoon dried thyme

  • 3 cups stale bread, cubed

  • 2 eggs, lightly beaten

  • 1/2 cup chicken or vegetable stock

  • Salt and freshly ground pepper, to taste

  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 375°F (190°C). Grease a medium baking dish.

  2. Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft. Add garlic and cook for 1 more minute.

  3. Add sausage meat to the pan, breaking it up with a spoon. Cook until browned and cooked through, about 7–8 minutes.

  4. Remove from heat and stir in chopped sage, parsley, thyme, salt, and pepper.

  5. In a large bowl, combine bread cubes, cooked sausage mixture, beaten eggs, and stock. Toss gently until everything is moistened.

  6. Transfer to the prepared baking dish. Drizzle melted butter over the top.

  7. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15–20 minutes until golden and crisp on top.

  8. Let rest for 5–10 minutes before serving.
