Summer Vegetable Orzo Salad with Lemon Vinaigrette

Ingredients

  • 1 cup dry orzo pasta

  • 1 zucchini, diced

  • 1 yellow squash, diced

  • 1 cup cherry tomatoes, halved

  • 1/2 red onion, finely chopped

  • 1/4 cup Kalamata olives, sliced

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons chopped fresh parsley

  • 1 tablespoon chopped fresh mint (optional)

Directions

  1. Cook orzo according to package instructions. Drain and rinse under cold water to cool.

  2. In a large skillet, sauté zucchini and squash in a touch of olive oil for 4–5 minutes until just tender. Let cool.

  3. In a small jar or bowl, whisk together all ingredients for the lemon vinaigrette.

  4. In a large bowl, combine orzo, sautéed vegetables, cherry tomatoes, red onion, olives, feta, parsley, and mint.
