Homemade Turkey Soup With Vegetables

Ingredients

  • 1 turkey carcass (or leftover turkey bones)

  • 10 cups water

  • 2 bay leaves

  • 1 tsp dried thyme

  • 1 tsp black peppercorns

  • Salt to taste

  • 2 tbsp olive oil or butter

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 3 carrots, peeled and sliced

  • 3 celery stalks, sliced

  • 2 cups cooked turkey, shredded or diced

  • 1 cup frozen peas

  • 1/2 cup cooked rice or pasta (optional)

  • 2 tbsp fresh parsley, chopped

Directions

  1. Place the turkey carcass in a large pot and add water, bay leaves, thyme, and peppercorns. Bring to a boil, then reduce to a simmer. Cook for 1–2 hours, skimming any foam off the surface.

  2. Strain the broth through a fine mesh sieve, discarding the bones and aromatics.

  3. In the same pot, heat olive oil or butter over medium heat. Sauté the onion, garlic, carrots, and celery until softened, about 5–7 minutes.

  4. Add the strained broth back to the pot. Bring to a simmer and stir in the cooked turkey, peas, and optional rice or pasta. Simmer for 15–20 minutes until the vegetables are tender and the flavors meld.

  5. Taste and adjust seasoning with salt and pepper. Sprinkle with fresh parsley before serving.
