Sweet and Savoury Candied Carrots

Ingredients

  • 1 lb (450 g) carrots, peeled and cut into even sticks or rounds

  • 2 tbsp unsalted butter (or plant-based alternative for vegan)

  • 3 tbsp brown sugar or maple syrup

  • 1 tbsp honey (or agave syrup for vegan)

  • 1/2 tsp ground cinnamon

  • 1/4 tsp nutmeg (optional)

  • 1/4 tsp salt

  • Fresh parsley, chopped (for garnish)

Directions

  1. Bring a pot of salted water to a boil. Add the carrots and blanch for 3-4 minutes. Drain and set aside.

  2. In a large skillet, melt the butter over medium heat. Stir in the brown sugar, honey, cinnamon, nutmeg (if using), and salt until the mixture is smooth and bubbling.

  3. Add the blanched carrots to the skillet, stirring to coat them evenly in the glaze.

  4. Cook the carrots for 5-7 minutes, stirring occasionally, until they are tender and the glaze thickens.
